Wild herbs and spring blossoms in Tux
14/05/2026

Have you seen the spring splendour around Adler Inn yet?

In May, the Tux valley belongs to those who take their time. Not because there’s nothing going on, but because they spot the many little colourful flowers by the wayside.

It happens somewhere between the valley station and the first mountain hut: your gaze, which is usually focused on the slope or the summit, lingers on the side of the path. On a little yellow bush. A leaf that smells of garlic. On a splash of colour that was still covered in snow just two weeks ago.

Hiking with the Stock family
Five guided tours a week, ranging from gentle walks through flower-filled meadows to challenging high-altitude trails, will show you the Tux valley in all its spring splendour. The Stock family knows every path, every shortcut, and every vantage point that isn’t marked on any map. As your hosts at your hiking hotel in Zillertal, they’re happy to share all their insider tips. And some of the most beautiful walking trails start right on the doorstep of Adler Inn.

Wild herbs
While the Hintertux Glacier remains blanketed in snow, spring is in full swing in the valley: fragrant wild garlic is sprouting alongside the streams, pretty cowslips are turning the meadows a pale yellow, and ribwort plantain and dandelions are flourishing wherever it’s already dry enough. If you have local guides like the Stock family with you, you’ll also learn why these plants have been used in Tyrolean cuisine for centuries – including that of your host Anni Stock.

Regionality
What’s gathered in the meadow in the morning may end up on your plate in the evening: as herb butter, a wild herb salad, or an accompaniment to your evening meal. Your host Anni Stock sees regionality not as a mere promise on the menu, but as a daily practice: short supply chains, familiar faces, ingredients with a story behind them. Whatever the Tux meadows have to offer is used in Anni’s kitchen – and whatever Anni serves up tastes just like the valley you’ve just admired with your own eyes.
